Sea Holly

Eryngium, the sea holly, is a small marvel of structure: steel-blue, thistle-like flower heads above a silvery collar of spiny bracts. In our summer bouquets it adds tension and contrast – and because we only source fully coloured stems from the auction, it keeps its intense blue colouring for many days. A highlight when fresh, an evergreen when dried.

Despite its name, sea holly botanically belongs not to the true thistles but to the carrot family (Apiaceae), alongside carrot and dill. Within a genus of over 200 species, Eryngium planum is the classic cut variety. The Veiling growers also supply selections such as „Blue Glitter“ with especially vivid heads, the compact „Blue Hobbit“, and the silvery Eryngium alpinum with its strikingly finely feathered collar.

In floristry, eryngium is a sought-after provider of structure and accent. Its stiff, branched stems carry several heads at once and fill out a bouquet airily without weighing it down. We like to use it as a blue counterpoint to warm summer tones – with sunflowers, apricot roses or dahlias, for example. In dried arrangements it holds its shape and colour for months, making it one of the most rewarding dried flowers of all.

With sea holly, quality shows in the colour and sturdiness: a well-matured stem has already coloured up fully from blue to violet-blue, the heads are firm and the bracts undamaged. Greenish, pale stems are cut too early and often colour up only moderately in the vase. Because we buy directly at the Veiling Rhein-Maas and insist on fully coloured stems, the holly enters the bouquet at full brilliance.

Stylistically, eryngium suits modern, naturalistic and rustic-wild arrangements alike. In a bridal bouquet it brings an unexpected, cool blue that looks particularly elegant beside white and eucalyptus. In rustic field-flower bunches it underlines the untamed character. And for anyone wanting something long-lasting, it can simply be dried head-down once spent and reused.

Care

  • 01Cut stems at an angle and place immediately in fresh, lukewarm water – the woody stems then take up water better.
  • 02Handle with care: the bracts and heads are spiny, so grip them with a light touch or thin gloves.
  • 03Remove lower leaves so no foliage rots in the water and it stays clear; the foliage tends to yellow quickly once cut anyway.
  • 04Keep cool and out of direct sun; eryngium is robust but rewards a moderately cool spot with longer life.
  • 05Change the water every two to three days and use flower food – the holly is undemanding and needs little care.
  • 06To dry, hang head-down in an airy, shaded place; colour and shape last for months.

How long does sea holly last in the vase?
As a cut flower, sea holly typically lasts around 7 to 14 days – towards the upper end with fully coloured stems and regular water changes. That makes it one of the more durable summer flowers. If you like, simply let it dry in the vase afterwards.
Is sea holly toxic to pets or children?
Eryngium planum is not classed as toxic by common poisonous-plant lists (including the ASPCA). The real hazard is mechanical: the spiny heads and bracts can injure when touched or swallowed. We therefore recommend placing the bouquet out of reach of small children and curious pets.
When is sea holly in season?
Eryngium flowers outdoors from June to September, and it is exactly in this window that we get the finest, fully coloured cut stems at the Veiling Rhein-Maas. As a dried flower, by contrast, it is available all year round.
Can sea holly be dried well?
Excellently, in fact – sea holly is among the best dried flowers. Simply hang it head-down in an airy, shaded spot. The steel-blue colour fades only slightly and the firm structure lasts for months.
